Matongo Washing Station sits at 1,900 meters above sea level, nestled in the fertile hills and cool climate of Kayanza Province, Burundi. The station brings together the work of around 2,000 smallholders, each cultivating just 25 to 50 coffee trees.
Matongo’s secret sauce lies in its Kenyan-inspired double fermentation method. After de-pulping, the coffee undergoes an initial fermentation under water for 8 to 12 hours, followed by a second fermentation in a separate tank before the mucilage is removed. The beans are then dried on raised African beds, carefully arranged into small pyramids to slow and extend the drying process.
This meticulous method enhances both clarity and depth of flavour in the cup. To me, the profile lands somewhere between a Kenyan and an Ethiopian—rich, syrupy notes of mandarin and blackcurrant, with a complex, refreshing citrus finish.
