Las Nubes, or “The Clouds” in Spanish, is aptly named for its location at 1,500 meters above sea level on the slopes of the Santa Ana volcano, where coffee has been grown for nearly a century.
The farm's owner, Ernesto Lima, is one of several coffee-farming brothers whose family has become one of the most decorated in Cup of Excellence history.
Ernesto and his son care lovingly for the coffee and shade trees at Las Nubes. Shade trees such as mahogany, cedar, and oak offer numerous benefits—not only shielding the coffee cherries from direct sunlight (which slows maturation and enhances quality), but also preventing soil erosion and fostering biodiversity.
In 2006, a violent eruption from Santa Ana threatened Las Nubes. However, the volcanic ash ultimately served as a natural fertiliser. As a result, many local coffee farms no longer need to apply additional fertilisers, and the eruption contributed to the production of some of El Salvador’s most prized coffees.
