The producers of this lot, Misadhi Coffee, are pushing advanced farming and processing techniques in Kenya.

For this lot, the natural yeasts present on the cherries were enhanced with Ava, a fungus that is used to enhance the coffee’s natural fruit flavours. Ava is part of the Aspergillus Oryzae family, traditionally used in Japan to make rice wine/Soy sauce/Miso.

The Ava inoculation alongside anaerobic fermentation lead to a super sticky-sweet fruity brew.
