Like pb & j, El Salvador & pacamara is one of those pairings which just works so well.
This lot comes from producer Fernando Lima’s highest farm, sitting at 1900masl atop the Ilamatepec volcano. Following the decimation of the farm in a 2005 eruption, Fernando used pickaxes and hands to clear the volcanic ash and rock. He re-planted the farm with Pacamara and Bourbon trees, which today are thriving in the rich volcanic soil.
This coffee has the complex aromatics of raw heather honey, a dried apricot tanginess and very well-structured body which reminds me of pecan, a very moreish brew indeed!
