Process: Double Anaerobic
Varietal: Caturra Chiroso
Taste notes: Wild strawberry, sherbet, lychee
So far 3 people have messaged me to ask “hey my bag of Chorro Alto says anaerobic, but surely it’s got to be a strawberry co-ferment no?”
Nope, just an incredibly fruity, meticulously processed and gently roasted double anaerobic.
This lot come from producer Luz Ángela Rojas, who states that her goal is “to produce coffees so exquisite that they can captivate the final customers, without the need for complicated processes”.
Well, mission accomplished. I get a lot of joy from seeing just how much flavour talented producers can squeeze out of these little beans.
